What's really near to our heart

Man is part of nature and has to respect and appreciate it. We saved the respect for life, alimentary and for the creature. Within the realms of possibility we do our best to come up to this principle. In this regard we do not accept compromises but additional costs. Thus our eggs are delivered exclusively from farmers of Völlan.

Which factors do we considerate in the kitchen?

• We only use fresh products of first-class quality
• The vegetables are seasonal and are drawn, if possible, from the regional farmers. Canned vegetables are a no-no.
• Fresh herbs play a primary role. Not only as condiment, but also as remedy. They are a part of every dish. Amongst other things we are geared to old knowledge of traditional medicine e.g. Hildegard von Bingen
• Basically we cook without flavour enhancers (glutamate), these are replaced by different herbs.
• The combination of dishes results from cognitions of chromatics. Colorful diversity for your soul - with blue conrflowers blossoms or other colorful blossoms...
• Also the adjacency is included in the kitchen. Maybe you will meet some cook while picking lavender or dandelions, or while collecting elderflowers...
• We cook according to the phases of the moon.
• We only use cold-pressed, high-class olive oils, finest seed-oils, high-class vinegars and South Tyrolean farmers butter.
• There is no ultra high temperature treated milk.
• Bread is baked without artificial baking agents, but exclusively with yeast.
